The main advantage of gas is strong heating performance. A properly sized gas countertop fryer can bring oil back to target temperature quickly after cold food is loaded, which helps produce crisp fries, breaded chicken, seafood, wings, and appetizers with more consistent color and texture. Fast recovery also prevents the crew from extending cook times to compensate for falling oil temperature.

Countertop construction is its other major advantage. These fryers preserve valuable floor space and can be positioned near a prep line or service counter where permitted by local fire, gas, and ventilation requirements.
