For a butcher shop, sausage program, BBQ operation, restaurant, or commissary kitchen, grinder selection starts with one practical question: how much product must move through the machine during the busiest hour? That answer affects head size, motor power, feed opening, duty cycle, and the workflow built around the machine.

Start With Production Volume, Not Just Horsepower

Horsepower matters, but it does not tell the full story. A powerful motor paired with an undersized grinding head can still create a bottleneck. Likewise, a large-head machine may be unnecessary if the operation only produces small batches of burger or sausage a few times each week.

Plate Size Determines the Finished Product

The plate is where a grinder becomes a menu tool. Fine, medium, and coarse plates produce different textures for burgers, chili meat, meatballs, fresh sausage, pâté, and specialty blends. A kitchen that only needs one burger grind may require a simple plate setup. A butcher shop or sausage operation needs more flexibility.

Coarse plates are useful for first-pass grinding, rustic sausage textures, and products that need visible definition. Medium plates are a common choice for burger and general-purpose ground meat. Coordinating this equipment prevents staff from carrying open pans across the kitchen or waiting for space in a crowded walk-in.
