So I get a email from Hakka to review my recent TC12 grinder. I'm only giving 3 stars as now due to not using it except for one mixing operation with a FME20T.
On first inspection of the TC12 it appears well made. I liked the momentary reverse. The height of the grinder thought so I can grind directly into meat totes.
Also like the way the mixer and grinder fit together and that it is indexed.
I also liked having grinder plates that have knurled on one side for easy removal. Just wish, if when in stock, they would list the grind size diameter in inches or mm rather than large, small, medium.
I used my new grinder/ mixer combo to mix 25# of hot dogs. It was a lean dense mix of venison, pork, and a little beef. Spices, cure, and binder flour. The TC12 had no issues mixing that. Cured meat mixing due to how tacky it gets is a good indication on equipment capability.
Once I come into fall when the vast majority of my meat processing happens I will give my full review of the performance of the grinder.
